This new recipe in Bubi’s kitchen is my favorite vegan quinoa salad. I love doing experiments with food and very often it ends up with some good and edible results :). One of my successful experiments is this awesome and refreshing salad, packed with all nutrients your body needs. This vegan quinoa salad is very light and delicious. It’s made easily with berries, bananas, pomegranate and lime dressing.
Quinoa as a main ingredient is gluten-free and high in protein. It’s one of the few plant foods that contain all nine essential amino acids. It is also high in:
- vitamin E
It’s really very easy to prepare, you can throw it all together in 15 minutes and it’s delicious! Let me know what you think in the comments bellow!

Vegan Quinoa Salad
- cup of red quinoa
- cup of blueberries
- cup of raspberries
- cup of pomegranate
- 2 bananas
- 1-2 tablespoons of coconut sugar
- 1 lime
1. start by cooking the quinoa – you want about double the amount of boiling water to quinoa – and let it boil for about 20 minutes. After quinoa is cooked let it cool down.
2. mix blueberries, raspberries, pomegranate, bananas with the cold quinoa, add 1-2 tablespoons of coconut sugar and add juice from one bigger lime. Mix all the ingredients and enjoy!
