Oh what a day. My human’s mommy made a special vegan fruit cake just for me. She helped me decorate it with native plants. I think she really likes me :).
- 12 tablespoons wholemeal spelled flour
- 1 cup oat milk
- 2 tablespoons apple sauce
- 6 tablespoons coconut sugar
- 1 baking powder
- 12 tablespoons oil
- pinch of salt
- fruit of your choice (plums, blueberries and peaches)
Mix 2 tablespoons of apple sauce with 6 tablespoons of coconut sugar. Add 12 tablespoons of oil, a pinch of salt and mix it. Add 12 tablespoons of flour, 1 baking powder, 1 cup of oat milk and mix it.
Pour the mixture on a baking sheet (add baking paper on the baking sheet before), arrange fruits on top of the mixture (plums, blueberries and peaches) and sprinkle with chopped almonds.
Bake at 180-200°C for approx. 30min.
